Ingredients of Kusha rice or plain Biryani

  1. You need of basmati rice.
  2. You need of large onions.
  3. Prepare of tomatoes.
  4. It's of turmeric and red Chile powder.
  5. You need of garam masala powder.
  6. Prepare of ghee.
  7. Prepare of Salt.
  8. It's of Bay leaves.
  9. You need of curd.
  10. You need of water.
  11. You need of paste--.
  12. You need of small onions( mainly shallot is used if not available use reg.
  13. You need of Green Chillies (depending on how spicy you want).
  14. It's of garlic cloves.
  15. You need of ginger.
  16. You need of coriander and mint leaves.
  17. You need of green cardimaom, 1 jaifal, small dalchini, 3-4 cloves.

This term refers to " Khushk " in Urdu, which means plain or dry. Rice cooked dry or plain boiled is termed as Khushka Rice. This is a staple in most Hyderabad Muslim households and served with an accompaniment of spicy dry or wet curry. Kusha rice or plain Biryani step by step

  1. Pre-soak the rice. Now for making the paste in a pan add oil then add the whole garam masala. Saute it add green chiles, then whole garlic cloves roughly chopped ginger. Saute it. Then add the onion, tomato, coriander and mint leaves. Saute it for 7-8 min..
  2. Then let it cool and make a paste of it..
  3. Now in a pressure cooker add ghee, then add bay leaf. Now add the sliced onion. Saute it till light brown. Then add the chopped tomatoes..
  4. Saute it till it becomes mashy. Now add turmeric, redchile and garam masala powder. Add little salt to it. Mix them well. Now add the paste and again saute it for 5-7 min. Now add the beaten curd. Now let the masala cook till oil starts coming out of it..
  5. Now add water to it. Add the rice. Add salt as required. Cover and let it cook. It may require 2-3 whistle depending on your rice. Serve it with raita, egg masala or korma..
  6. Please note that if you are noting making it in pressure cooker then follow the method of making Biryani. If you don't have shallot use regular small sized onion.
