Recipe: Delicious Sabudana Vada
Sabudana Vada. Sago or Sabudana is a common ingredient that is used in some recipes made during the fasting period. Thus Sabudana Vada is one of those dishes that is made during Hindu religious fasting (vrat or upvas). Both Sabudana Vada and Sabudana Khichdi are two recipes that I make during fasting days.
These fried vadas (fritters) are made with sabudana (sago) and require only a handful of ingredients. Very addictive, vegan, gluten-free and can also be made for fasting. In India whenever we would invite someone over for chai, mom would always make something fried and crispy. You can cook Sabudana Vada using 8 ingredients and 3 steps. Here is how you cook that.
Ingredients of Sabudana Vada
- Prepare 1/2 half kg of boiled potatoes.
- You need 4-5 of green chillies finely chopped.
- Prepare 4 Tablespoons of kuttu ka Atta.
- You need As required of Refined oil for deep frying.
- Prepare as per taste of Sendha salt.
- You need 2 Cups of (soaked sabudana for 3 hr's).
- Prepare 3 Tablespoons of roasted peanuts.
- You need Handful of Coriander leaves finely chopped (optional).
Making Sabudana Vada: Take all the ingredients (soaked sabudana, mashed potatoes, crushed peanuts, ginger paste, green chili, cumin seeds, rock salt, sugar, lime juice, cilantro) in a bowl. Mix them well and make a dough-like ball. This dough mixture should be stiff so you can form the vada easily. Sabudana vada is a popular crisp fried snack made with tapioca pearls (sago), roasted peanuts, boiled potatoes and herbs.

- Take a mixing bowl, add boiled potatoes just mashed it, drain all the water of sabudana, and use it. Now add salt, green chilies, coriander leaves, roasted peanuts (finely chopped) kuttu ka atta. It will help to bind the mixture..
- Now make medium size tikki. Turn on the heat pour oil. Wait the oil to heat completely..
- Now fry 1 by 1 the tikkis and just fry it on Medium flame. One side if cooked then flip to other side. Repeat the same in making other Vada. Then enjoy it with sweet curd..
It is a popular Maharashtrian snack that is eaten not only as a tea time snack but also as a fasting or Upvas/ Vrat food. Sabudana khichdi and sabudana kheer are other foods made during Navratri & Ekadashi fastings.
