Recipe: Delicious Khichudi / Bengali Dal Khichdi

Khichudi / Bengali Dal Khichdi. Bhaja muger dal khichuri is a delicious one-pot meal of rice, moong dal and vegetables. This Bengali khichuri recipe is always made during durga puja festival. It is served as bhog to ma durga along with some other Bengali delicacies.

Khichudi / Bengali Dal Khichdi It can be mild, spicy, runny, thick depending on individual preferences and need. For example, if you have an upset stomach or feverish feeling, you would crave for a mild khichdi with running consistency. Bengali Khichuri (Bhoger Khichuri) Moong Dal Khichdi ~ traditional and famous Durga Puja khichuri/khichdi made using roasted moong dal, rice, veggies, spices, and ghee. You can have Khichudi / Bengali Dal Khichdi using 20 ingredients and 7 steps. Here is how you cook it.

Ingredients of Khichudi / Bengali Dal Khichdi

  1. It's of big onions sliced fine lengthwise.
  2. It's of garlic crushed.
  3. You need of and half tomato slices lengthwise.
  4. Prepare of Ghee.
  5. You need of dry tejpatta/ indian bay leaf.
  6. You need of ginger finely sliced / paste.
  7. Prepare of carrots diced into small pieces.
  8. Prepare of potatoes diced in big pieces.
  9. Prepare of green beans roughly sliced into half inch sizes.
  10. It's of moong dal.
  11. It's of masoor dal.
  12. It's of chana dal.
  13. It's of black urad dal.
  14. It's of 'govindobhog' rice/ flavourful small grain rice.
  15. You need of Turmeric powder.
  16. It's of Salt.
  17. It's of dry red chillies.
  18. Prepare of hot green chillies.

It melts in your mouth and is a healthy Indian comfortfood. It's called Bhuna Khichuri (or Bhuni Khichuri). This one-pot meal is basically a dried and spicier. How khichuri / khichdi is served in Bengal: You can use any other rice variety but that gooey, oozy, taste and gelatinous texture like risotto is possible only with the par-boiled rice which lends a completely different aroma to the dish.

Khichudi / Bengali Dal Khichdi instructions

  1. Heat 4 heaped tablespoons of ghee and add the dry red chilli and tejpatta to it..
  2. Add the onions and saute till light brown.
  3. Add the garlic cloves and saute.
  4. Add all your veggies(potato, tomato, beans, carrot),ginger, green chilli, sugar, turmeric and salt and saute for 2-3 minutes. Add ghee if your pan is drying out..
  5. Wash all the dals and rice together and add it in the pressure cooker over the other items. Add enough water to cover 2 inch over the dals..
  6. Pressure cook for 3 whistles. Lower the flame after the first whistle. Let the steam release on it's own once you turn off the gas..
  7. Once you open the lid, check if you need to add water to get it to the right consistency(like a very thick soup). Boil don't pressure cook anymore. And it's ready.

It is then devoured with ilish maach bhaja or fried hilsa, the prized fish from the Ganges. Then, add the roasted moong dal in the cooker and cook for another two minutes. Add the drained rice afterwards and stir well to mix all the spices with the dal and rice. When the khichuri is prepared, switch off the flame. Khichdi or Khichuṛī (pronounced [ˈkʰɪtʃɽi]) is a dish in South Asian cuisine made of rice and lentils (dal), but other variations include bajra and mung dal kichri.
