Recipe: Perfect Idli sambhar

Idli sambhar. Idli sambar recipe made with dal, quick cook veggies, spices and herbs. This is my version of the quick tiffin sambar that goes good with most South Indian breakfasts. You can serve this flavorful & delicious tiffin sambar with Soft idli, Instant Rava idli, medu vada, khara pongal, Crispy dosa, masala dosa and most other tiffins.

Idli sambhar Apart from idli, this sambar can also be served with dosa, vada and Pongal. The hallmark of this idli sambar recipe is the addition of freshly roasted and ground spices. Idli sambar should not be too spicy. You can have Idli sambhar using 30 ingredients and 15 steps. Here is how you cook it.

Ingredients of Idli sambhar

  1. You need of cumin seeds / jeera.
  2. It's of boiled tuar daal.
  3. Prepare of boiled tuar daal.
  4. Prepare of urad dal /black gram.
  5. It's of coriander seeds.
  6. Prepare of chana dal /bengali gram.
  7. Prepare of methi seeds / fenugreek seeds.
  8. It's of kashmiri red chillis dried.
  9. It's of few curry leaves.
  10. It's of oil.
  11. You need of onion roughly chopped.
  12. It's of garlic paste.
  13. Prepare of coconut fresh / desiccated.
  14. You need of small gooseberry sized tamarind.
  15. It's of garam masala powder.
  16. Prepare of water to blend smooth.
  17. Prepare of onion diced into cubes.
  18. It's of potato diced into cubes.
  19. It's of turmeric powder.
  20. Prepare of salt.
  21. Prepare of beans chopped.
  22. It's of water or as required to adjust consistency.
  23. Prepare of small piece of jaggery / gud.
  24. You need of few coriander leaves chopped.
  25. Prepare of For tempering.
  26. Prepare of oil.
  27. It's of mustard seeds.
  28. Prepare of urad dal.
  29. Prepare of hing / asafoetida.
  30. Prepare of few curry leaves.

Toor dal or moong dal used in the sambar should be cooked really well, soft and mushy. If you already haven't relished Idli Sambar at an Indian household or an Indian restaurant yet, then this is a must try! Idli Sambar are a typical South Indian breakfast that has become popular across the globe for it's soft spongy Idlis and lipsmackingly delicious Sambar. Open the cooker once the pressure goes down.

Idli sambhar step by step

  1. In a wide pan add oil, cumin seeds, urad dal, chana dal, coriander seeds, methi, red chillis and few curry leaves.
  2. Now add some onions and garlic paste.
  3. Switch off the flame and add coconut.
  4. Add a piece of tamarind and garam masala powder..
  5. Blend to smooth paste.
  6. In a large kadai add a tsp of oil and saute diced onions till they sweat..
  7. Now add potatoes and fry for a minute.
  8. Along with water also add turmeric and salt to taste.
  9. Now add beans and cook for a minute.
  10. Add prepared masala paste and give a good stir. boil for 5-8 minutes.
  11. Add cooked dal.
  12. Also add 2-3 cups of water to get desired consistency.
  13. Add a small piece of jaggery.
  14. Prepare the tempering and pour it to sambar.
  15. Add few chopped coriander leaves and give a good mix.

Garnish with coriander leaves and serve hot with idli or dosa or pongal. Sambar, a hot and spicy lentil soup with mixed vegetables, is a must have accompaniment for popular South Indian breakfast and lunch recipes like Idli, Dosa, Medu Vada, Steamed Rice etc. The consistency of the sambar should be a little watery, so add water accordingly. When it starts to boil, simmer and cook for a few minutes, stirring in between. Garnish with finely chopped coriander leaves and serve hot with idli, dosa or ven pongal.
